It is the maintenance of cold during all the steps of the frozen products from production to consumption.
Each link in this chain (cold stores, transports, cold counter in the shops) has always to keep a temperature never higher than - 18°C, to grant the product quality.
Once thawed, frozen products have to be processed and stored as fresh products and it is recommended not to frozen them again not to affect their organoleptic and qualitative characteristics.
